If you had told me a month ago that I’d be eating tofu once a day in May, I woukd have laughed in your face. I like healthy food as much as the next Madame, but let’s not get crazy here.
But we’ve gotten crazy.
It all started when a small business called Health-Eaz launched with the goal of providing sustainable jobs through the sourcing and delivery of healthy foods. What’s not to love, right? I browsed their price sheet and jumped on whole fresh coconuts at 300-500 cfa, the fresh coconut milk at 2000 cfa, loved the sauerkraut idea but I make my own, ooh – the raw cashews could be fun… screeching halt at the tofu. Let’s not get crazy now.
But it was only 500 cfa per block. And I do enjoy the challenge of cooking with new ingredients…
I got crazy. I ordered TWO blocks.
When the delivery arrived (on time, fresh and with the correct change), I immediately started Pinteresting for articles on tofu for newbies.
Two weeks later, I am a convert. I’ve made tofu tacos with jalapeño-lime slaw, toasted cashew & tofu stir-fry with pineapple over fonio, roasted tofu nuggets and this past week I got crazy bold enough to just eat it plain.
But this post really isn’t about tofu. It’s about perfectly ripe, meaty coconuts that are perfectly cleaned and trimmed so all you have to do is slice and serve. It’s about fresh coconut milk that goes in your coffee, your curry, your popsicles, your granola cereal and your glass. #straightup It’s about sweet cashews that make great snacks, toppings and additions to your menus.
And it may be about sauerkraut, but I can’t say for sure since I am just crazy enough to make my own. 😉
