Breakfast casserole made with spicy ground sausage, cheese, eggs and biscuit dough is what makes Christmas morning for me. This is the recipe I use here in Dakar for ground sausage. La Boucherie Nouvelle has chair à saucisse, which is ground pork mixed with just the right about of good fatty stuff, and they deliver!
500g ground pork (chair à saucisse)
1/4 cup water
1 tsp salt
1 tsp brown sugar
1/4 tsp dried sage
1/4 tsp rosemary
1/4 tsp thyme
1 tsp crushed red pepper flakes (or finely chopped piment)
1/2 tsp freshly ground black pepper
1/4 tsp nutmeg
Combine all ingredients. Mix until blended.
Cook over medium heat for 5-10 minutes, or until completely cooked through.
